Simple, affordable and nutritious— honey-roasted carrots might just become the side dish your dinner table didn’t know it needed.
Roasted carrots with honey and herbs
Ingredients:
2 lbs. fresh carrots
2 tablespoons olive oil
1 teaspoon salt + ½ teaspoon black pepper
1–2 tablespoons honey (or substitute pure maple syrup)
Chopped fresh herbs to taste (parsley, thyme, rosemary, sage or dill)
Preparation:
Heat the oven to 400°F. Peel and slice carrots on a diagonal. Toss with olive oil, salt and pepper on a baking sheet. Roast for 20 to 25 minutes, until tender. Remove pan from the oven, drizzle carrots with honey, stir to coat evenly. Roast for five to 10 more minutes until caramelized. Sprinkle with fresh herbs before serving. Optional add-ons for festiveness: Add a sprinkle of toasted nuts or orange zest before serving. Use purple, yellow and white carrots for color variety.
